Peach Jalapeno Salsa

This bright, juicy salsa with a bit of crunch is fresh and fabulous either paired with simple corn chips or providing the sweet note to offset a spicy dish. Shown here with Blackened Salmon and Coconut Rice.

Ingredients:

3 to 4 Peaches or Nectarines

1 Jalapeno, seeds and ribs removed

1/2 Red Bell Pepper

1/2 small Red Onion

Juice of 1 Lime

1 Tbsp Mint, minced

1/8 tsp salt

Cut all ingredients into small dice and add to a medium bowl, stirring to combine.

Serve with Corn Chips or top Blackened Fish, Seafood or Chicken.
