Brussel Sprout Slaw with Chipotle Ranch Dressing

Colorful, crunchy, sweet, and spicy with a creamy, zesty chipotle infused ranch dressing.

Assemble the slaw ahead of time and store the dressing separate. Toss just before serving to preserve crunch.

Ingredients:

1 lb Brussel Sprouts, trimmed, halved lengthwise and sliced thin

1/2 small red onion, sliced thin

1 jalapeno, halved lengthwise, ribs and seeds removed, sliced thin crosswise

1/2 yellow bell pepper, sliced into thin matchsticks

1/2 red bell pepper, sliced into thin matchsticks

2 carrots, shredded

Dressing:

1/2 C mayonnaise, we prefer Hellman’s

1/3 C Sour Cream

2 Tbsp Chipotle chillis and sauce

2 Tbsp Lime Juice

1 Tbsp Ranch Seasoning

Prep all veggies and add to a large bowl. Set aside. In a small bowl, whisk mayonnaise, sour cream, chipotle chilis and sauce, lime juice and ranch seasoning. Add to prepared vegetables and toss to combine.
